Step 3: Mix the dough, knead and rise. Whisk the flour and salt in the bowl of your stand mixer. (Photo 4) Start mixing in the stand mixer, on low speed, and add the reserved yeast mixture. (Photo 5) Once it’s incorporated, add the reserved tangzhong and the eggs. Continue mixing until a shaggy dough forms.
Reduce heat to maintain a simmer. Place 1 to 2 pretzels into water. Do not overcrowd pot. Cook for 30 seconds, flip and cook for another 30 seconds. Using large slotted ladle remove pretzels and transfer to baking sheet. Prepare egg wash by whisking together egg with 1 teaspoon of water. Brush pretzels with egg wash.
Preheat oven to 350F. Gently brush the top of the unbaked brioche with egg wash mixture. Bake until the loaf turns deep golden brown color, approximately 40-55 minutes; remember to rotate the baking pan halfway through the process. Let the loaf cool in the pan for 15 minutes before unmolding it.
Preheat the oven to 350°F or 180°. Brush the top of the vegan brioche with non-dairy milk and bake on the lower oven rack for about 25 minutes. The vegan brioche buns should be golden on top and soft and fluffy inside. Let cool down completely on a wire rack before eating. Optionally, sprinkle with powdered sugar.
Combine warm milk and 2 beaten eggs in the bowl of a stand mixer fitted with the dough hook attachment. Stir in yeast mixture. With mixer running on medium-low speed, gradually beat in flour and salt.
Add the milk mixture, flour, granulated sugar, salt, yeast, and butter to the bread machine, adding in the order suggested by your bread machine manufacturer. Set the machine on the dough cycle; add cinnamon and currants or chopped dried fruit at the beep. If the mixture seems too dry, add water in very small amounts.
Use the paddle attachment, and just mix the flour and sugar together lightly on medium speed. Make a shaggy dough. Add in the dairy free yogurt, vanilla, and bloomed yeast mixture. Then mix the dough on medium speed with a paddle attachment until it forms a shaggy dough, about 3-5 minutes. Add in the vegan butter.
Totally up to you, the baker! Cover each loaf pan tightly with clear plastic wrap, and let proof at room temperature for about 2½ to 3 hours, until doubled in size. Preheat the oven to 350 degrees F / 180 degrees C while the dough is proofing. Bake for 37 to 40 minutes in the center of the oven.
